Preserving food with vinegar works thanks to the latter’s acidifying ability, which lowers the pH level of the products, preventing the growth of microorganisms. This method is used above all for preserving vegetables that have already undergone heat treatment, such as pickled cucumbers.
How long pickled cucumbers keep
Unopened jars of pickles can be kept for years. Unlike products preserved in oil, with pickles the risk of botulism contamination is practically eliminated, since the production of botulinum toxins is suppressed by the acidity of the acetic acid.
However, once the jar has been opened, you can keep pickled cucumbers for up to three months, provided the jar has been kept in the refrigerator and closed.
Often, to tell whether a product is still good or not, it is important to rely on your own senses and pay attention to changes in taste, color, consistency, and smell.
As a rule, you may also notice that:
- The vegetables have wilted
- The vinegar has turned milky
- There are traces of mold on the glass or lid
- The smell is very sour
- The taste is sour and rancid
If none of the above characteristics is present, you can assume that the preserve is still fit for consumption.
A tip — mark the date of opening on the label or lid of the jar so that you notice when three months have passed since it was first opened.
Also, do not forget to observe cooking times for the products, always make sure the jars are sterile, and the lids airtight.
