Traditionally, homemade Easter cakes are made with raisins, nuts or candied fruit. But if you are already tired of that kind of filling, try making a homemade cream instead. Any of these options is incredibly easy to prepare. And in terms of taste, your holiday baking will turn out even better than something from a pastry shop.
Lemon cream
To make the citrus filling, you will need:
- lemon — 1,
- egg — 1,
- sugar — 50 g,
- butter — 15 g.
Squeeze the juice from the lemon and mix it with the egg and sugar. Stir the mixture and put it in the refrigerator for an hour.
Then strain the mixture and add the butter. Cook the mixture until it thickens, then let it cool in a plastic container under cling film.

Chocolate cream
To make a delicate chocolate filling, prepare the following ingredients:
- milk chocolate — 335 g,
- 33% cream — 532 g.
Warm the cream in a saucepan, then pour it into a bowl with the pieces of softened chocolate. Wait a couple of minutes, then blend the mixture with a blender.
Cover the finished mixture with film and put it in the refrigerator overnight. After that, the cream will be ready to use.
Cream cheese filling with jam
For the cheese filling, prepare:
- cream cheese — 170 g,
- mascarpone — 170 g,
- 33% cream — 100 g,
- any jam — 100 g,
- powdered sugar — 65 g.
Put all the ingredients into a bowl, then mix them together using a whisk or mixer. If you do not like fillings that are too sweet, you can add less powdered sugar, according to the Marie Claire portal.
